Beautiful deep dive into all things sesame - a favourite ingredient of mine as well. I always have a big jar of Tahini, toasted sesame seed oil and bags of white and black sesame seeds at home (plus Halva too of course). I love the flavour and find it so versatile an ingredient. And I love baking with it as well.

Great piece, Simi. One question: how do you make milk-powder if you're not buying commercial ready-made?

Hi Elisabeth, I haven't done it myself but I looked into it as I too wondered about this. You boil milk until it is paste like and it becomes darker, then you dry the paste out, and grind it into a powder with either a bit of sugar or cornflour. Let me know if you make your own.
